Nectarine and Charred Corn Salad

Tasty Summer Recipe: Nectarine and Charred Corn Salad

Sometimes we eat corn straight off the cob smothered with butter and a sprinkle of salt. Other times, we make it into this salad.

I like my corn charred, like beyond what most people find acceptable charred. Blackened.

The outside of the kernels is smokey and crunchy while the inside are still juicy. Obviously grill the corn to your liking for this recipe. There is no wrong way to do it.

Ingredients:

  • 4 ears of corn
  • 2 nectarines, sliced thin
  • 4 oz cotija cheese, sliced thin
  • 1 small shallot, sliced thin
  • Juice and zest of 2 lemons
  • 1/4 cup olive oil
  • 1 sprig of rosemary, chopped
  • Salt
  • Pepper
  • 1/2 cup torn fresh basil leaves

Instructions:

  1. Get the grill nice and hot. We’re going to give the corn that tasty charred flavor.
  2. Peel off the husks from the corn, getting rid of the silk but keeping the husks.
  3. Wrap the corn back up with the husks, leaving some kernels exposed. Tie the husks together in the middle with another husk.
  4. Put the wrapped corn on the grill. Let them cook for a bit until the kernels get a little charred and the husks darken.
  5. Once they’re done, let the corn cool down, then take off the husks and cut the kernels off. Put the corn kernels in a big bowl.
  6. Now, add the sliced nectarines, cotija cheese, and shallots to the bowl with the corn. It’s a mix of sweet, tangy, and savory flavors.
  7. In a separate jar, mix together the lemon juice, zest, olive oil, and chopped rosemary.
  8. Shake it up until everything’s mixed well. Add some salt and pepper to taste. This dressing adds a zingy kick to the salad.
  9. Pour the lemon-rosemary dressing over the corn mix and gently toss it all together.
  10. Finish off the salad by sprinkling torn basil leaves on top. It adds a fresh pop of flavor.
