Firstly, place the flour in a small bowl and add the salt if using. You can set the bowl aside.

As a next step, chop your chocolate into small pieces to allow it to melt easily when combined with butter. 

For the last step, you’ll need to roughly chop 130g/4.66 oz of chocolate, which is no smaller than 1cm/0.4 inch in diameter.

Remove the butter from heat after melting halfway over medium heat and stir with a spoon until fully melted. Adding the chopped chocolate next will require the butter to be not too hot or boiling, so this helps maintain a smooth consistency.

Make sure the butter is not hot but warm when you mix it with chocolate if you would like the butter to be completely melted.

Stir the chopped chocolate (161g /6 oz) into the butter with a spoon or spatula. The chocolate may take 20-30 seconds to melt completely. Once all the chocolate pieces have been mixed together, you should stir until there are no traces of chocolate.

It may not completely melt the chocolate if you have chopped your chocolate too finely or the butter is not warm enough. Stir the pan very gently over low heat to solve the problem.

Remove the mixture from the heat once the chocolate pieces are small and reach room temperature. Continue stirring until the mixture is warm. The chocolate should melt quickly.

Place the sugar and eggs in a large bowl and stir until they are just combined, about one minute. Avoid overmixing in order to achieve fudgy brownies instead of cakey ones. After adding the vanilla, mix it in.

Stir the butter-chocolate mixture into the sugar mixture until evenly combined; do not overmix.

After adding the flour, stir gently with a spatula. Add the large chocolate chunks to the mixture later.
