Make 2024 Meals Your Most Delicious Yet!

*This post focuses on 2024 meals—recipes Cooking Light Diet members and their families have been enjoying so far this year.

If you’re here, it means you love delicious food. How do we know that, you ask?

Well, for starters, you’re here, aren’t you? You had to have found your way here somehow. Odds are, you were either considering a less stressful way to meal plan, or you wanted to find healthy and tasty recipes crafted by experts. Or, you’re here because an article/post/friend pointed you in this direction. But the main takeaway is: You wouldn’t be here if you didn’t love delicious food.

So…now what? Normally, now would the time in the article the author would try and sell you on subscribing to the Cooking Light Diet. They’d tell you how good the food is, how customizable the weekly menus are, and how successful members past and present have been in hitting their personal weight-loss goals.

But that’s easy. We’d rather have actual customers tell you how good the food is, how easily adaptable the weekly menus are to their lives, and how much they look forward to sharing these meals with their family and friends. And that’s exactly what we’re going to do now.

Using our wonderful Facebook Community, we’ve compiled member posts from just one week in January 2021. These are some of the meals they’re feeding themselves and their families. These are some of the recipes (one meal at a time) that they’re using to change their lives. These are some of the meals that will become lifelong favorites. Notice we’ve repeatedly emphasized some. There are thousands of recipes on the Cooking Light Diet, and this delicious food is just from one week of posting. So, emphasis on some.

New Cooking Light Diet member Jen Watkins “REALLY” recommends this recipe. In her words: “Not that difficult and so good that my fiancé said it’s his favorite thing I have ever made!” Sounds like a keeper, Jen—the fiancé, too.

In a post subsequently flooded with comments fawning over it, Donna West shared a picture of this delectable comfort food dinner.

Mushroom French Dip Sandwiches

Susanne Hensel-Goodwin had this recently as her Meatless Monday main, with one minor revision. “Instead of cooking the onions and mushrooms in two separate pans, I cooked the onion first, then set it aside, then cooked the mushrooms in the same pan. I served the sandwiches with oven-baked fries and some dill pickles.” Hope you saved us some leftovers, Susanne!

Spanish Spaghetti with Olives

Dubbed “the only spaghetti recipe my kids will eat,” Michele M. Handal-Werner has nothing but good things to say about this frequently cooked dinner.

Nuts and Bolts Trail Mix

Cooking Light Diet meal plans don’t just come with breakfast, lunch, and dinner options! You also get access to snacks, and Mary Gresham Dee recommends this one if you’re feeling hangry.

Pork Chops with Roasted Apples and Onions

Patricia Reidy Lawrence was actually searching for a different recipe when she discovered this one. She even improvised a little to use up some things in her kitchen. The result? “I’m so glad I went for [this recipe] because it was delicious! Imagine, me cooking this restaurant-quality meal in my own kitchen. …Husband approved, and I’m back in my CLD groove.” We’ll eat to that, Pat!

Dijon-Herb Crusted Salmon with Creamy Dill Sauce

Another day, another scrumptious recipe lovingly prepared by Susanne Hensel-Goodwin. Susanne says this is a “family favorite” recipe, and we really want to be part of her family now, to be honest.

Looking for a make-ahead breakfast recipe that freezes well and ensures you don’t have to make breakfast again anytime soon? According to Mary Gresham Dee, this is the recipe for you.

And Pat Butte would absolutely agree! She made this recipe after seeing Mary’s post and exclaimed: “These were delicious! Thanks for sharing! Hubby, my pickiest of picky eaters, even loves them.” So happy to hear that, Pat!

Sheet Pan Chicken with Roasted Baby Potatoes

What happens when a recipe calls for baby potatoes but you only have regular sized? You do what Susanne Hensel-Goodwin did, and you just cut a regular-sized one into small cubes. Recipe verdict? “It was very good.”

Quick Beef Stroganoff 

It’s Cooking Light Diet member Donna West back again to make our mouths water, this time with a meal that, until now, I’d only ever associated with a talking oven mitt. Putting this one on my menu thanks to you, Donna!

Beer-Braised Chicken and Root Vegetables

Jen Watkins is “getting back on track” with this crowd-pleasing chicken entrée. She also has a crucial tip: “Don’t skip on the butter at the end, or the scallions! They add a needed touch!”

Lastly, we’ll leave you with Will Ferrell and Michele M. Handal-Werner’s favorite: Meatloaf Burger Steaks with Tomato Gravy. This time, Michele subbed in brown rice instead of the mashed potatoes, and her picky-eater children still loved it.
